The Romano is a blend of the Istrian olive varieties Buza and Rosignola. It is famous for its rich texture and bright golden green color. It has a delicate flavor with gentle spiciness and bitter notes. The aromas are definite and rich in hints of medium-ripe tomato, banana, and apple, paired with fragrant notes of basil and artichoke. This oil pairs perfectly with all kinds of plant-based dishes, but it also spices up all fish dishes. We especially recommend it with tuna carpaccio or with a roasted pumpkin and lentil salad.
