These delectable scrambled eggs with truffles will be creamy, aromatic, intense, and delicate. You can use black truffles or white truffles for this recipe. We prefer the black truffle as it has a more intense aroma and more earthy vibes that will really give these eggs some character.
Best case, you start the night before by beating the eggs in a bowl and whisking them roughly. If you like, you can also add a dash of cream. To this, you add about 2/3 of the sliced black truffle. Then put the bowl in the fridge for a few hours - even better overnight. This allows the full flavor of the truffle to soak into the egg, making your luxurious scrambled eggs even more aromatic.
The next day you let the butter melt in a pan - until the butter throws small bubbles. Now take your scrambled egg mixture out of the refrigerator and whisk everything again. It may well be that the eggs are slightly browned by the truffle - this is completely normal and unproblematic. Put the eggs in a pan over medium heat. Gently push them towards the center with a wooden spoon or spatula, letting them set. When the scrambled eggs are still juicy, turn off the heat and season everything with salt and a little pepper. Then you can put the truffle scrambled eggs in a bowl and grate the remaining black truffle over it.
If you don’t have fresh truffles, a tasty alternative is to use a little truffle oil mixed in with the butter. You can as well season your regular scrambled eggs with truffle salt or use truffle butter instead of regular butter.
