Pasta with Tartufata: Effortless Gourmet Food

A quick pasta with truffle sauce can be a great quick-fix gourmet meal. This recipe for truffle pasta is beautifully simple yet absolutely delicious. The magic ingredient is in fact the tartufata which is great in combination with many types of pasta or rice. And – the tartufata is ideal for those who have just started cooking with truffles. Furthermore, it is one dish you can serve everybody as it can be made as a vegan option. And let's be honest, there are not many Croatian dishes that cater to vegetarians and/or vegans. 


The heavy-duty Croatian Style 

You really need to be craving truffle pasta and be very hungry and you still would probably not be able to finish your plate. This recipe is a traditional Croatian one and absolutely no one will leave the table hungry. 


You need:

  • 500g pasta (Tagliatelle)
  • 100g butter (optional truffle butter)
  • 30g tartufata
  • 250 ml cream (optional vegan cream) 
  • 100g parmesan 

Instructions: 

Cook pasta in salted water for 12-15 minutes. Sauté tartufata in butter, add cream, and a little salt, and boil everything together. Pour the cooked mixture over the cooked pasta and mix everything gently, add Parmesan cheese if desired. And if available you can also add grated fresh truffle or pickled grated truffle.

Truffle Pasta 

The skinny Truffle Pasta

This recipe is absolutely delicious yet it can be quite filling. This recipe is for everyone looking for a more digestible option. 

You need:

  • 500g pasta (Tagliatelle)
  • 30g tartufata
  • 250 ml cream (optional vegan cream) 
  • 100g parmesan

So you basically just skip the butter and proceed with the above-mentioned instructions. 



Italian-style Truffle Pasta

This kind of truffle pasta recipe you will find more often in Italy.

You need: 


  • 500g pasta (Spaghetti)
  • 2 egg yolk
  • 100g parmesan or prano Padano
  • 100g butter (optional truffle butter)
  • 2-3 teaspoons tartufata
  • salt 

Instructions:

Boil pasta in salted water for 12-15 minutes. After the pasta is ready, drain 2/3 of the water in which it was cooked and leave the rest in the pot with the pasta and remove from heat. Add the butter and mix the pasta with two spoons - like a salad. Once the butter is melted, add the two egg yolks and mix with quick movements. Finally, add the tartufata and the parmesan. Add salt to taste.
